Tonight I would like to present a primo piatto that is healthy and filling. It’s perfect for these cold winter evenings… well, not so cold here in Los Angeles.

The spaghetti con salsa di lenticchie is a nutritious dish, that combines vegetables and pulse, rich in fibers, proteins and carbohydrates. A great vegetarian pasta!
- 3 tablespoons of extra virgin olive oil
- 1/2 onion chopped
- 1 carrot chopped
- 1 clove garlic, crushed
- 1 fresh rosemary sprig
- 1 cup of dried lentils I like the Trader’s Joe small green lentils. You can even buy these on amazon – see link below!
- 1 cup of crushed tomatoes
- 12 oz of thick spaghetti
Step 1: In a large saucepan add olive oil, onions, carrots, garlic and rosemary.
Step 2: Saute over medium heat for about 5 minutes.
